Drying of "wet" seeded crops such as watermelon is critical step in seed production. If seeds are dried to slowly they may germinate during processing. If they are dried too rapidly they may be damaged as well. Oily seeds such as watermelon should never be dried at temperatures exceeding 35 degrees C and should be stored at a moisture content of less than 9% on a dry weight basis.
